This recipe makes a pound and a half size loaf, suitable for two people with leftovers for the following day. You can also make the full recipe. Meatloaf pairs well with mashed potatoes and maybe a can of green beans. |
In a medium bowl combine
- ½ finely minced onion
- 1 egg
- 2 TBSP BBQ Sauce, ketchup or tomato paste
- ¼ cup breadcrumbs (or oatmeal)
- ½ tsp Worcestershire sauce
- ½ tsp Balsamic vinegar
- ¼ tsp salt
- ¼ tsp black pepper

Don't put too much nor too coarsely chopped onion in, or you'll get soup. Anyhow, mix it all up and then slowly mix in
- 1 pound ground beef
- ½ pound sausage
Start with the sausage and incorporate all the other stuff, then add the beef. Don't mix ground beef too aggresively. Squish it all together using your hands. Press into 1 liter glass pan. In a small bowl combine:
- ½ TBSP light brown sugar
- 2 TBSP Diana's Spicy BBQ Sauce (or ketchup)
Then smear the goo over the top of the meatloaf.
Put it in the fridge for a bit. Meanwhile, peel potatoes, cut into medium sized chunks (likely in half) and put in pot of salted water on a cold stove. Then go do other things. |
Preheat the oven to 350. |
Stick a probe in the meatloaf near the top. Put the loaf in the oven and bake it for
an hour and a half at 350 |
Start peeling some spuds. |
Get the potatoes boiling and then leave at a simmer. On my stove they won't start boiling 'till 8:30. |
Make sure the potatoes are simmering, then get a can of beans going on a gentle heat.

Check the meatloaf. The probe should read at least 180, and if you dig around you'll get varying opinions on what the temp actually is. When you're pretty sure it's not likely to give you e-coli turn the oven off, leave the meatloaf in there and carry on with the rest of supper. |
Check the potatoes. When done, drain and put back on the turned off burner to dry.
